Underhill Shiraz
Wine
Yarra Yering Underhill Shiraz is made from a single unirrigated estate block planted in 1973. The Shiraz vines grow on heavy clay based soils at Yarra Yering's western extremity.
The grapes are hand harvested and destemmed without crushing to retain whole berries. Fermentation occurs in half tonne open tanks with a measure of complete bunches added to intensify tannins, structure and interest.
After basket pressing the wine ages for 18 months in new and seasoned French oak before bottling via gravity without filtration.
Deep dark red, Yarra Yering Underhill Shiraz is a cool climate Shiraz with dark fruit flavours, persistent tannins and a sweeping finish. Cellaring potential is 20 years.
